Rainy Days with Paddington
Are you one of those people that love rainy days? I look forward to them because that’s when I feel I am the most creative. There’s something about wet weather that makes you relax when you have kids because it takes a lot of pressure off of you having to go out to find something fun to do. There are so many things to do with them at home. Movies are a natural stormy weather activity for a lot of people. Grey weather reminds me of London. When I mention this, naturally my kids think of Paddington Bear and beg to watch the movie.
One stormy day I decided that it would be a lot of fun to watch Paddington and make marmalade. My kids loved it and couldn’t get enough of it. They felt like they experiencing part of the adventure for themselves. This was a rainy day that they will never forget.
Marmalade
1 pound of organic oranges (I use organic since you eat the skin).
1 cup of water
1 cup of organic sugar (I also use evaporated cane juice)
2 vanilla beans with the insides scraped out
2 teaspoons of cinnamon
- Thinly slice the oranges while removing all of the seeds
- Place the oranges in a pot on the stove and heat on medium
- Add the remaining ingredients and bring it to a boil
- Reduce the heat to low and let simmer
- Let it cook for about 40 mins until it thicken and reaches a temperature of about 223 degrees Fahrenheit on a candy thermometer
- Let it cool down before putting in in jars to keep in the refrigerator to be used within 10 days
